
If you’re a fan of bold flavors this Cali Blackened Chicken Sandwich is going to hit the spot! Inspired by my favorite sandwich from a spot in the Inland Empire called Badlands BBQ, this sandwich is my homemade version of their iconic Cali Blackened Chicken Sandwich. While nothing quite matches their flavor (especially paired with their red skin potato salad), this recipe helps satisfy the craving when I can’t make it out there.

Ingredients:
1 Brioche Bun
1 slice Pepper Jack Cheese
2 tbsp Chipotle Mayo
1 Chicken Breast (or thigh for extra juiciness)
1 tbsp Butter
1 clove Minced Garlic
1/2 Avocado, sliced
2-3 slices Red Onion
2-3 slices Tomato
Chicken Seasoning Mix:
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Black Pepper
1 tsp Paprika
1/2 tsp Cayenne Pepper
1/2 tsp Cumin
Salt to taste
Instructions:
1. Season the Chicken:
- Combine the garlic powder, onion powder, black pepper, paprika, cayenne, cumin, and salt in a small bowl.
- Rub the seasoning all over the chicken breast until it’s evenly coated.
2. Cook the Chicken:
- In a skillet over medium-high heat, melt the butter and add the minced garlic.
- Add the seasoned chicken to the skillet and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F.
- Set the cooked chicken aside to rest for a few minutes.
3. Toast the Bun:
- Spread a thin layer of chipotle mayo on the cut sides of the brioche bun.
- Place the buns in the skillet, mayo-side down, and add a slice of pepper jack cheese to the top bun.
- Toast until the cheese is melty and the bun is golden brown.
4. Assemble the Sandwich:
- Spread more chipotle mayo on the bottom bun.
- Layer on the avocado slices, blackened chicken, red onion, and tomato slices.
- Top with the cheesy bun and give it a little press.
Final Thoughts:
This sandwich packs a punch with spicy, creamy, and smoky flavors balanced by the smooth avocado and crisp veggies. Whether it’s a quick lunch or a weekend treat, it’s sure to hit the spot. And while it may never be quite like Badlands BBQ, it sure comes close enough to curb that craving!
